quoi de neuf – May, flowers and more mirthful musings

Bonjour! Welcome May! Yesterday I got my second shot 💉, so glad that’s over with, a great way to celebrate – May the Forth be with you! Otherwise, not much going on with me, just trying to spend every spare minute admiring all my beautiful tulips, I wish they lasted longer. Please enjoy this short but sweet post – quoi de neuf – May, flowers and more mirthful musings!

I came across a cool, quirky website this week. Oral Florist is a sound library of artists reading aloud texts they encounter in their daily lives. And the flowers that bloom while they are reading are too sweet!

Guess who Smartless just had on their podcast.. my favorite girl, the delightful, inspiring GP! Yay!! I think I’ll listen again. Those guys are funny!

It’s the 20th anniversary of the movie Bridget Jones’s Diary this month. Definately one of my top 10, maybe top 5 favorite movies. I need to do a post on that some day. Anyway, you know what I’ll be watching tonight.

Check out these Monique Lhuiller Tuileries guest towels, napkins, and even shower curtain from Pottery Barn. I want that whole bathroom!

I also bought some Supergoop Glow Screen. It really does give a glow. On top of a little Tulip Dew Drops, and add some concealer, ok some days a lot of concealer, and you’re good to go!

Just got this Zara BASIC V-NECK T-SHIRT in black and I love it! Part of the Join Life collection and only $7.90 I’m buying several more, maybe I’ll embroider some! How cute would the striped one be with something Frenchie, maybe a croissant or a French Flag, embroidered on it? I also ordered this cute Striped T-Shirt.

I decided to order Cacoa Bliss, after seeing it on a Boho Beautiful video. It has all kinds of good stuff in it and Boho offered a special discount. Made a smoothie with it yesterday, and WOW is it delicious!

Last May, I hadn’t yet started my Wednesday quoi de neuf posts, but I did post a beautiful recipe, Daydreams of Paris Linguine with Morel Cream Sauce and Eggs. The search for morels begins!

Tonight for Cinco de Mayo I’m picking up Chicken Enchiladas from Fresh Thyme. I really love GP’s Chicken Enchiladas recipe, but I figured I wouldn’t be feeling up to cooking the day after my shot. I’ll just doctor them up with a little extra enchilada sauce and queso fresco.

And last but not least, a new recipe! Someday I will get around to organizing all my recipes here. Miam! Feeling the healthy!

Sunny Spinach Quinoa Salad

A perfectly delicious salad for the mirthful month of May. Inspired to use ingredients I had on hand, and by spinach, which is now in season, I totally surprised myself with this beautiful salad!

Ingredients

  • 1 cup fresh spinach
  • ½ cup cooked quinoa
  • ¼ cup roasted red pepper strips, marinated in olive oil * see note below
  • ½ avocado, sliced
  • 5 greek olives * or Nicoise
  • ¼ cup crumbled Feta
  • 2 tbsp shelled pistachios
  • lemon wedge
  • salt, pepper

Instructions

  • Plate the spinach. Top with quinoa, roasted red pepper strips, avocado, olives, feta and finally pistachios. Drizzle with lemon, season with salt & pepper. Voila! The most delicious, fresh, spring salad you've had in a long time!°

Notes

I found some beautiful, giant red peppers at my local grocery that were in the discount bin.  I just cut them in half, or quarters, lengthwise, clean out the seeds, set them on a parchment lined baking sheet skin side up and into the oven they go.  450 F for about 20 minutes or until the tops start to char, or blacken.  Remove from oven, let cool slightly, remove the charred skin, place in a glass jar pour olive oil over to coat and refrigerate.
