It’s a happy foodie Friday with magical gazpacho!

Happy Friday! All Fridays are happy, but especially furlough Fridays. I truly do thank God – TGIF – for each one! It’s a beautiful Friday morning here in Ohio, just perfect. Last week I promised the Most Magical Watermelon Recipe Ever, and here it is! It is so simple too. I think simple recipes that let the ingredients shine are the best. This recipe has also become a staple at ma soeur et moi’s annual 80’s Pool Party. Because our party involves 80’s music and unicorns, both magical. While I was dreaming of this gazpacho, I came up with a bonus recipe for you also below. It’s a happy foodie Friday with magical gazpacho!

Magical Watermelon Tomato Gazpacho

This is the most magical gazpacho you have ever tasted! I look forward to making this every summer. It contains lots of vitamin C and also vitamin A, iron, fiber and 7 grams of protein. The almond flour is the magic ingredient – it gives it a beautiful flavor and texture.

Ingredients

  • 2 cups watermelon, chopped reserve ¼ cup to stir in
  • 2 nice, ripe heirloom tomatoes, chopped reserve ¼ cup to stir in
  • ¼ cup red onion, diced
  • 2 tbsp almond flour/meal
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp pink salt
  • 1 clove garlic, minced
  • goat cheese or feta, crumbled to garnish
  • fresh herbs to garnish
  • salt, pepper to taste

Instructions

  • Blend everything but the reserved tomato and watermelon, cheese and herbs in a blender or food processor. Stir in reserved tomato and watermelon. Refrigerate soup until chilled, about 1 hour. To serve, garnish with crumbled cheese, fresh herbs, a splash of olive oil, salt and pepper. Savor the magic.

Earlier this week, after celebrating Le Quatorze Juillet, I found myself with some leftover champagne – WHAT?! – just a splash. I also had two very ripe mangos that I needed to use. I had planned on making a salsa with them when we had taco night last Saturday, but made Goop’s Pico de Gallo instead, which btw is very good. I was thinking that a salsa is kind of like gazpacho, so maybe a mango gazpacho? I was also wanting a cooling recipe after my meditation with the Chopra 21 Day Meditation Experience. The centering thought that day was “I nurture my body through lightness and coolness“. Perfect. So, once again, with coolness, it’s a happy foodie Friday with magical gazpacho!

Magic Mango Gazpacho

A magical mango and crab gazpacho perfect for a hot summer day. What makes it magical? A spash of champagne.

Ingredients

  • 2 Mangos, cored and chopped
  • ½ cup water
  • 1 tbsp rice wine vinegar
  • 1 tbsp lime juice
  • 1 tsp extra virgin olive oil *I love Zoe brand
  • 1 cup cucumber, seeded and finely chopped
  • ¼ cup red onion, diced
  • ¼ cup red bell pepper, diced
  • ½ jalapeno pepper, diced
  • 2 tbsp cilantro, chopped
  • splash of champagne or good sparkling wine
  • salt, pepper to taste

Crab Relish

  • ½ cup lump crab meat, or imitation finely shredded **To make vegan, finely chop some artichokes or hearts of palm instead!
  • 1 tbsp lime juice
  • 1 tbsp jalapeno pepper, diced
  • 1 tbsp red bell pepper, diced
  • 1 tbsp cilantro, chopped

Instructions

  • Combine half of chopped mango, water, vinegar, lime juice and olive oil in blender or food processor, blend until smooth. Transfer to a bowl and stir in other half of mango, cucumber, onion, red bell pepper, jalapeno, cilantro, salt, pepper and a splash, or two, of champagne. Chill in fridge for 1 hour.

Crab Relish

  • Combine relish ingredients in a small bowl.
  • To serve, divide mango gazpacho in two bowls and top each with a nice spoonful of crab relish. Enjoy your magical summer meal!
