Magical Watermelon Tomato Gazpacho
This is the most magical gazpacho you have ever tasted! I look forward to making this every summer. It contains lots of vitamin C and also vitamin A, iron, fiber and 7 grams of protein. The almond flour is the magic ingredient - it gives it a beautiful flavor and texture.

- 2 cups watermelon, chopped reserve ¼ cup to stir in
- 2 nice, ripe heirloom tomatoes, chopped reserve ¼ cup to stir in
- ¼ cup red onion, diced
- 2 tbsp almond flour/meal
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
- 1 tsp pink salt
- 1 clove garlic, minced
- goat cheese or feta, crumbled to garnish
- fresh herbs to garnish
- salt, pepper to taste
Blend everything but the reserved tomato and watermelon, cheese and herbs in a blender or food processor. Stir in reserved tomato and watermelon. Refrigerate soup until chilled, about 1 hour. To serve, garnish with crumbled cheese, fresh herbs, a splash of olive oil, salt and pepper. Savor the magic.
