Salut and hej! As we head in to November, I’m once again thinking of cozy comfort food. November is the month of in-between — the glow of autumn fading into winter’s quiet calm. The trees have shed their leaves, and evenings arrive earlier each day. It’s a time that invites slower rhythms and softer light — the season for candles on the table, something warm in the oven, and meals that feel like a hug. Last year I posted a 7 Day Scandinavian Style Meal Plan, and I can’t wait to do it again this year. It’s time for the cozy art of November eating.

This is a meal plan where Scandinavian comfort meets fall’s cozy abundance, where hygge meets lagom. A way of eating that has always celebrated simplicity and balance: earthy grains, nourishing soups, and fresh ingredients that feel good in both body and spirit. Blending that with autumn’s favorite flavors — roasted roots, pears, cardamom, freshly baked bread — gives November a kind of effortless warmth.

Autumn’s ingredients are a perfect match for Scandinavian comfort. Warm spices like cinnamon and cardamom blend naturally with local fall produce — pumpkins, apples, and root vegetables.

A few pairings to inspire cozy November cooking:

  • Roasted carrots + dill + mustard dressing — bright, tangy, and deeply satisfying. Or how about Root Vegetables Rôtis à la Cardamom?
  • Rye toast + pear + brie + honey — a soft, elegant breakfast or light supper.
  • Root veggie soup + nutmeg + toasted pumpkin seeds — grounding, nutrient-rich, and full of texture. Try adding parsnips to my Lazy Monday Cumin Sweet Potato Soup, along with seeds & nutmeg.

A Cozy November Menu

Here’s a simple menu that brings together everything I love about this month — Nordic calm, fall warmth, and nourishing ease.

Breakfast: Skyr or Greek yogurt with cardamom-honey pears and toasted walnuts
Lunch: Roasted beet and couscous salad with sage vinaigrette
Dinner: Chickpea & spinach curry served with rye crisps or seeded bread
Treat: Chestnut madeleines or a mug of cinnamon or cardamom tea

Each meal is uncomplicated but deeply satisfying — rich in fiber, color, and comfort.

I’ll be adding supplements, powders, etc. to the bowls, bites, smoothies, and anything else I can. I’m using what’s in my cupboard – tocos powder, maca powder, goji berries, Sunwarrior Protein powder, Sunwarrior Matcha Collagen powder, chia seeds, flax seeds, hemp seeds and Cacao Bliss. I also just ordered Organic Wild Lingonberries. 😉

Speaking of Simple Scandi Energy Bites, I don’t have dried apricots so I’m subbing figs. I’ll probably add the wild lingonberries too. I’m also thinking of whipping up White Pepper Meringues for a simple Scandi after dinner treat, replacing the pepper with cardamom 😋

For Saturday night’s pasta, I can’t wait to try Salted Pistachio Alfredo from Sauz. This would be good on Friday night’s pizza too!

And from last months Unexpected Flavor Pairings post: I’ll be making Sage Tahini Vinaigrette for the Autumn Rolls and salads. I’ll try apple and cheddar on the Almond Pumpkin Seed Bread. I’ll also be making a miso mayo to dip the sweet potato fries for Thursday nights dinner.
