Healthy Cheesy Broccoli Soup
Hello and welcome to a new recipe blog post. For this July’s, 5 Day High Protein and Fiber Special Meal Plan, I’ve created a new broccoli soup recipe. Of course broccoli has fiber, but how could I add more? Green split peas – they have fiber and protein too. Even though they are dried, peas are a seasonal veggie, or should I say legume, along with the broccoli. Cottage cheese is the special ingredient that gives this soup even more protein and makes it extra cheesy. Full of protein and fiber this easy Healthy Cheesy Broccoli Soup is ready in less than an hour. It’s delicious and nutritious for a meatless Monday or any weeknight dinner and makes 4 generous servings, enough for a nice lunch later.
How to make healthy cheesy soup
This broccoli soup is loaded with vitamin C from the broccoli, I use the stems too, no waste! It has lots of vitamin A and E to make you glow, and plenty of B vitamins too. How can it be cheesy and healthy? Cottage cheese is the answer. A half cup of low-fat cottage cheese contains around 12 grams of protein, it has vitamin A too. Blending it with some broth before adding it to the soup makes the soup nice and creamy. Topped with a dollop of Greek yogurt and some shredded gruyere to make it extra, Healthy Cheesy Broccoli Soup is perfect anytime you want to feel the healthy. Healthy Cheesy Broccoli Soup
Ingredients
- 2 tbsp olive oil
- 1 large onion chopped
- 2 cloves garlic minced
- 1 cup green split peas
- 1 tsp sea salt
- 3 grinds fresh black pepper
- 5 cups water
- 4 cups broccoli florets & chopped stems
- 1 tbsp fresh thyme lightly chopped
- 1 cup 2% cottage cheese
- 4 tbsp 2% greek yogurt
- ½ cup gruyere cheese grated
Instructions
- Heat oil in large pot or Dutch oven (love my Le Creuset!) over medium heat. Add onion and cook for 5 minutes. Add garlic and cook for 1 minute more.
- Add the split peas, 4 cups water, salt and pepper and bring to a boil. Reduce heat to medium-low, cover partially and simmer 30 minutes.
- Add broccoli, carrots, 1 cup water and thyme. Cover and cook on low 15 minutes or until broccoli is tender.
- Remove pot from heat. Add the cottage cheese to a medium bowl and add some of the broth from the soup. Blend with an immersion blender until smooth. Add cottage cheese mixture to soup and use the immersion blender again to blend soup, leaving some chunks of broccoli for texture.
- Top each bowl of soup with a tablespoon of yogurt and 2 tablespoons of gruyere. Salt and pepper to taste. Sante!
