Pear Pistachio Smoothie and Simple Scandi Energy Bites

Bonjour! With November just around the corner, I’m excited to share a sneak peek of two fresh, nourishing recipes from my new meal plan. Pear Pistachio Smoothie and Simple Scandi Energy Bites —perfect for brightening your week!

First up, my Pear Pistachio Cardamom Smoothie. This simple yet flavorful blend brings together my love for pears, pistachios, and the warm notes of cardamom—a delicious addition to my collection. And for a little extra inspiration, I turned to one of my favorite YouTube vloggers, Birta Hlin, to create these Simple Scandi Energy Bites. She loves dates filled with nut butter, and these bites include that goodness and so much more.

The Pear Pistachio Smoothie is balanced with carbs, protein, and healthy fats, making it a great option for breakfast or a midday snack. Pistachios provide healthy fats, fiber, and antioxidants. Pear also adds fiber, Vitamin C and natural sweetness, while oat milk and yogurt give it that extra creaminess, and calcium. Cardamom, besides giving it a warming fall vibe, adds antioxidants and can aid in digestion.

Pear Pistachio Smoothie

Combining the seasonal autumn flavors of pear, pistachio and warming cardamom, this delicious smoothie is a perfect start to your day. The addition of protein powder gives you an extra boost.

Ingredients

  • 2 tbsp pistachios, shelled and chopped save a few for garnish
  • ½ pear, cored and sliced freeze pear slices ahead of time if desired
  • 1 handful kale or spinach
  • ½ cup oat milk
  • 1 tbsp greek yogurt
  • 1-2 pinches ground cardamom
  • 1 tsp honey
  • ½ scoop Sunwarrior Protein Warrior Blend or your fav vegan protein powder
  • 1 pinch salt

Instructions

  • Put pistachios in blender first then add the rest of the ingredients. Blend until smooth. Serve chilled, garnished with pistachio.

For the Simple Scandi Energy Bites, I thought I’d combine the dates with nuts, (more pistachios please!), apricots (for glow), coconut oil which contains MCT’s to speed up metabolism, and cardamom, a Scandinavian favorite and also one of my favorite fall flavors. The coconut flakes make them reminiscent of Swedish chocolate balls, only way healthier, and vegan too. These are the perfect pick me up, any time of the day!

Simple Scandi Energy Bites

Made with pistachios and a hint of cardamom, a classic Scandinavian fall flavor and rolled in coconut flakes, these bites are reminiscent of Swedish chocolate balls but are healthier and vegan. They're the perfect anytime pick-me-up!

Ingredients

  • 7 Medjool dates, pitted if they are dry, soak in water 10 minutes
  • 5 dried apricots
  • ½ cup pistachios
  • ¼ cup almond or walnut butter*
  • 1 tbsp coconut oil
  • 1 tbsp cacao powder I really recommend Cacao Bliss*
  • ½ tsp ground cardamom
  • 1 pinch flaky salt
  • shredded coconut to roll bites in

Instructions

  • Combine all ingredients except for coconut flakes in a blender and pulse until a dough forms. Be careful not to overprocess, you want the crunch of the pistachios.
  • Form into balls, roll in coconut and enjoy!
    Store in refrigerator for up to one week, or freeze.

To make your own Walnut Butter simply roast raw walnuts on a sheet pan in the oven at 325 F for 10-12 minutes.  Process in food processor until smooth.  It will be slightly runnier than peanut butter.  Let cool before using in the recipe.
