A Simple Sunday Soufflé and The Best Roast Chicken
Bonjour! It’s Sunday and time for simple, delicious meals. We’ll start with a late, leisurely breakfast, that will carry us straight through lunch to a comforting, Parisian style dinner that will end the week perfectly. The secret ingredient in both of these dishes is black truffle oil, it adds an extra something special, a dash of frenchness if you will. This weekend, I hope you’ll enjoy a simple Sunday soufflé and the best roast chicken.
Simple Sunday Soufflé
Welcome to husband Mark’s Sunday Soufflé. Not technically a souffle, more like a frittata. It puffs up beautifully and we like the sound of Sunday Soufflé though, so there you are. This is a breakfast souffle, full of healthy veggies. This souffle would be perfect for a Keto diet, it’s high in protein and fat. High fat? No high fun. It’s also loaded with vitamin C, calcium, and itamin A. What makes it simple is the fact that you can use whatever veggies and cheese you have on hand. Every variation husband has created has been awesomely delicious.
Sunday Breakfast Soufflé
Ingredients
- 6 eggs free range, organic
- ¼ cup milk organic
- 1 cup spinach loosely chopped
- 1 cup bell peppers, red or yellow chopped
- 1 cup swiss cheese shredded
- 1 tsp Parisien or Sunny Paris from Penzeys* see note
- ½ tsp paprika
- ½ tsp turmeric
- salt, pepper to taste
- 1 tbsp butter
- black truffle oil
Instructions
- Preheat oven to 350°℉.
- Whisk together eggs and milk.
- Add spinach, peppers, cheese and spices to egg mixture.
- Add 1 tbsp butter to a greased baking dish (or 2 small casserole dishes). Pour egg mix into dish. Top with a dash of truffle oil.
- Bake 35-40 minutes or until it has risen and is slightly firm in center. Remove from oven and enjoy!

the Best Roast Chicken
While searching the internet to find out what exactly the French like to eat for Sunday dinner, I discovered that they love their Poulet Rôti du Dimanche. Not that this is exclusive to the French, we love our Sunday Roast Chicken here too. But in the spirit of making it Parisian, for my Parisian Meal Plan, I’m using extra butter, and switching out the fresh rosemary that I usually use for Herbs de Provence.
How is this part of a healthy meal plan? First use the highest quality, organic, free range chicken you can find. Chicken is also packed with protein, B12 and iron. But most of all this Sunday dinner is a meal to savor mindfully and joyfully. A comforting and happy way to end your week, or start a new one. And it fits perfectly into a meal plan because the leftover chicken can be used in meals in the upcoming week. Chicken salad anyone?
Roast Chicken Parisian
Ingredients
- 4-5 lbs organic whole chicken
- 3 tbsp butter chopped into small squares
- 2 tbsp Herbs de Provence or Sunny Paris
- 5 cloves garlic peeled, minced
- 1 tbsp extra virgin olive oil plus extra for drizzling on the potatoes
- 1 tbsp truffle oil
- 4 celery stalks to place under the chicken
- ½ lemon
- 7 baby gold potatoes scrubbed
- tsp sea salt plus extra for seasoning
Instructions
- Preheat oven to 400°℉.
- Combine butter, 1 tbsp herbs, garlic, olive oil and a dash of salt in small bowl and mix with a fork to combine.
- Place chicken, breast side up, in roasting pan or dish on top of celery stalks. Tuck wings under. Slide fingers under skin on breast and legs to make pockets and evenly distribute the butter herb mixture under the skin, add some to inside the bird cavity too along with the lemon half.Tie the ends of the legs together with kitchen twine. Add potatoes to pan with chicken. Drizzle olive oil over the potatoes and remaining 1 tbsp herbs. Drizzle top of chicken with truffle oil. Sprinkle some sea salt over chicken and potatoes.
- Place in oven and bake for 1 hour 20 minutes – to 1 hour 40 minutes, approximately 20 minutes per pound. Baste chicken with juices halfway through. Remove chicken from oven when temperature registers 165°℉. Let rest 15 minutes. Carve and enjoy.
Notes
Although I believe this is the perfect Sunday dinner, if you’re just not feeling it, how about a Brie Tartine du Dimanche Soir, to “fight the Sunday blues”. Just make sure to add a nice salad so you can still feel the healthy. For dessert? A full fat, decadent yogurt and some fruit, comme les français. Or maybe some Pistachio Nice Cream? No Sunday scaries with this comforting meal. Santé and à bientôt!
