Happy October!

Salut! Just a short post to wish you a happy first day of October and to also let you know I added a (simple) recipe page finally – the link is on the menu above. Remember to Eat Seasonally which I think is so easy and so much fun in October. I’ll be transitioning from an apple a day to a pear a day. I ❤ pears! Especially combined with pistachios like in my Pear Pistachio Nice Cream. I think I need to make a pistachio pear macaron… what about a pear pistachio salad? Or a smoothie? Oui, oui et oui! I’ve got it! It’s Friday and you know what that means… PIZZA! Pear Pistachio Pizza! I know, I know… I think I promised a while back, no more pizza recipes, but this is too perfect!

Pear Pistachio Pizza

I combined my love of pears and pistachios to make a delicious Fall Friday night pizza! I'm using my perfect pizza dough recipe (see link below), and topping it with fried sage leaves for that perfect fall flavor!

Ingredients

  • ½ recipe perfect pizza dough * refer to my recipe Perfect Parisian Pizza for the perfect recipe and method, see link below.
  • 1 tbsp olive oil * or pistachio oil
  • ¾ cup gruyere, grated
  • 1 ripe pear, thinly sliced
  • ¼ cup gorgonzola
  • ¼ cup pistachios, coursley chopped
  • 1 bunch sage leaves
  • 1 tbsp butter
  • salt, pepper

Instructions

  • Place pizza stone in oven and preheat to 475° F.
    Roll pizza dough into a thin circle.
    Sprinkle some cornmeal or flour on your pizza peel (or upside down sheet pan) and place pizza dough on top.
    Drizzle dough with olive oil, add a little salt and pepper. Sprinkle with gruyere.
    Arrange a layer of pear slices in concentric circles. Top with gorgonzola and pistachios. Slide pizza in oven and bake about 10 minutes or until crust is a dark golden brown. Remove from oven.
    While pizza is baking, add butter to a small saucepan and fry sage leaves, about a minute per side.
    Top pizza with fried sage leaves, a drizzle of olive (or pistachio, or even truffle!) oil, a sprinkle of grated parmesan, and some freshly ground pepper. Slice and enjoy!
