Tomato Salad

A simple, summer tomato salad that lets seasonal tomatoes shine. Use a variety, hopefully that you find at the farmers market, or even better, in your own garden!

Ingredients

  • 3 cups tomatoes, a variety sliced, quartered, cut into bite size pieces
  • ½ cup red pepper chopped
  • ¼ cup red onion chopped
  • 2 tbsp fresh herbs your choice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt & pepper to taste

Instructions

  • Place tomatoes, red pepper and red onion in a bowl. Add herbs, olive oil and vinegar, toss to combine. Salt and pepper to taste.
