Root Vegetables Rôtis à la Cardamom

You could use any root vegetables for this, but I think the combo of carrots, parsnips and sweet potatoes with cardamom is particularly bright and delicious.

Ingredients

  • 4 carrots
  • 1 large parsnip
  • 1 sweet potato
  • olive oil
  • cardamom
  • salt, pepper
  • maple syrup
  • cilantro or parsley to garnish * optional

Instructions

  • Preheat oven to 425° F. Clean/peel the carrots and parsnip. Cut carrots, parsnip and sweet potato into large chunks. Toss veggies with olive oil, cardamom, salt and pepper. Place on foil lined baking sheet. Drizzle with maple syrup. Roast for 30-40 minutes, stirring vegetables halfway through cooking time. Remove from oven, place in a pretty serving bowl, garnish with cilantro or parsley - or both! - if desired.
