Quick Raspberry Jam
A beautiful spread for your morning tartine. In my original confiture de framboise recipe I used frozen black raspberries, but since those are impossible to find, red raspberries are delicious too.

- 1 cup frozen raspberries * or a combo of raspberries and blackberries
- 1 tsp lemon juice
- 1 tbsp sugar
- 1 tsp corn starch
- 1 dash crème de cassis * optional, but really makes it magical 🦄
Put frozen raspberries in a small sauce pan. Add a dash of water and the lemon juice and cook on medium-low heat, stirring often. Mix cornstarch with just enough cold water to dissolve. After raspberries have cooked about 10 minutes, add cornstarch mixture and stir. Add a dash of cassis. Transfer to a pretty bowl and enjoy on a slice of good toasted bread!
