Ingredients
1tablespoonextra-virgin olive oil
1large leekwhite and pale green parts only, sliced and thoroughly rinsed
1shallotchopped
12ouncesmushroomssliced
1garlic cloveminced
1small Yukon Gold potatopeeled and diced
½teaspoondried thymeor a few sprigs fresh thyme
4cupslow-sodium vegetable or chicken broth

Instructions
Warm the olive oil in a soup pot over medium heat. Add the leek and shallot and cook for about 5 minutes, until softened.
Add the mushrooms and cook for another 7–8 minutes, allowing them to release their liquid and begin to turn golden.
Stir in the garlic, potato and thyme and cook for another minute.
Pour in the broth and season lightly with salt and pepper. Bring to a gentle simmer, cover partially and cook for 15–20 minutes, until the potato is completely tender.
Remove any woody thyme stems, then carefully blend the soup until smooth and velvety. Add a splash more broth if you’d like a thinner consistency. Taste and adjust the seasoning.
Ladle into warm bowls and finish each serving with a few drops of truffle oil and fresh herbs.

Notes
A little truffle rule: Add truffle oil after cooking rather than simmering it in the soup. Its aroma is delicate, and a little goes a very long way.
