Cozy Mushroom & Lentil Soup Mix

Ingredients

  • 1 cup green lentils
  • ½ cup barley or farro
  • ¼ cup red lentils
  • cup dried mushrooms porcini, shitake or a mix
  • 2 tbsp dried onion flakes
  • 2 tbsp dried celery flakes
  • 1-2 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt or fancy salt
  • ¼ tsp pepper

Instructions

For the jar:

  • Layer ingredients prettily in a jar. Top with 1 bay leaf. Extra: add a sprig of dried thyme tied with twine.

To cook:

  • Pour the jar into a big cozy pot.
    Add 6 cups broth (vegetable, chicken, or mushroom stock).
    Bring to a boil, then simmer 45–55 minutes, stirring occasionally. The dried mushrooms will rehydrate and perfume the whole kitchen.
    Taste and adjust seasoning.
    Serve with warm bread, candlelight, a quiet moment to breathe. Ladle into your favorite rustic bowl and bask in the knowledge you’ve just made pure coziness.

  • A splash of cream or coconut milk (or yogurt!)
    A handful of fresh mushrooms sautéed in butter
    A drizzle of olive oil
