An Amazing Chickpea Green Goddess Salad

One day I gathered up all the greens in the fridge to make a salad, added some paprika chickpeas, topped it with Green Goddess dressing and oh la la! It turned out to be one of the most amazingly delicious salads I've ever made! Feel the healthy! Feel free to substitute what ever fresh herbs you have on hand. I know it would be beautiful with fresh tarragon.

Ingredients

  • 1 large kale leaf stem removed, chopped
  • 1 large romaine leaf chopped
  • 1 handful baby spinach
  • ½ cup cucumber chopped
  • ½ cup canned chickpeas drained
  • 2 green onions chopped
  • 1 tsp olive oil
  • salt, pepper, sharp paprika or smoked paprika to taste

Green Goddess Dressing

  • ½ cup Greek yogurt, 2% fat
  • ½ cup olive oil mayonaisse or Vegenaise
  • ½ cup parsley leaves chopped
  • ½ cup cilantro leaves chopped
  • 1 tbsp thyme leaves
  • 2 tsp lemon juice
  • 2 tsp tarragon vinegar
  • 1 tsp capers
  • 1 tbsp water
  • salt, pepper

Instructions

  • Place the greens on a salad plate and top with the cucumber and onions.
  • Heat olive oil in small pan. Next, toss chickpeas with paprika and salt, add to pan and sauté until crisped. Dress salad generously with Green Goddess, top with chickpeas and, as ma sœur says, feel the healthy!

Green Goddess Dressing

  • Add all ingredients to food processor and pulse until smooth. Alternately, Add ingredients to large bowl and blend with an immersion blender - less mess!

Notes

Feel free to add mint leaves for greater greenness, ground flax seed for omega-3 and fiber or some goat cheese for extra zing and vitamin A.
